OH HI! I’M sophia!

I’m so happy you’re here!

I’m a midwest-born-and-raised girl who’s built a life in North Carolina. My husband and I have spent the past 3 years renovating our 1960s colonial style home and making memories with the best yellow lab in the whole world. I currently work full-time in healthcare but still make time for creating tasty food, DIYing home projects, and gardening. Most of all, I love Jesus and treasure relationships with the people he has created!

Probiotic Purple Sauerkraut - more than just sour Probiotic Purple Sauerkraut - more than just sour cabbage. It’s a super food for your gut and this new recipe up on the blog uses red cabbage, beets and ginger! Initially it’s a lovely purple color (hence the name) and then turns red throughout the fermentation process. The process is messy but the end result is a delicious, tangy, side dish or condiment that you’ll love!

Had a break in the rain to go gather a fresh lunch Had a break in the rain to go gather a fresh lunch from the garden. The White Russian kale I planted from seed on March 1st is full of tender, crisp stalks. I just cut the most mature leaves. Here’s a simple salad and dressing recipe:
- 4 cups roughly chopped kale, massage for 1-2 minutes until glossy green to make kale even more tender and less bitter
- 1 cup blackberries
- 1/2c feta crumbles
- Sweet Balsamic Dressing: 1/4c olive oil 2 tbsp strawberry balsamic vinegar, 1 tsp Dijon, 2 tsp honey, salt and pepper to taste - shake to blend
- Additional toppings as desired: grilled chicken, air fryer chickpeas, walnuts
Another benefit of kale is that it won’t get soggy with the dressing - you can meal prep it ahead of time and keep in the fridge!
