High Protein Frittata with Bacon and Goat Cheese

Nourishing High Protein Frittata
This High Protein Frittata is a one pan meal that is perfect for any meal of the day. It has balanced savory flavors, nourishing protein, and a secret creamy ingredient! This is a one pan dish that is a no brainer for brunch or a make ahead breakfast. A frittata consists of eggs, similar to a quiche, but generally is more hearty. A frittata is crustless and uses both the stove and oven to cook. You can get creative with the toppings and flavors, I always try to strike a balance between flavor and nourishment.
Hosting with a High Protein Frittata
I recommend this recipe for any brunch or breakfast menu, especially when you are hosting guests. It’s savory and filling which is satisfying for hungry guests but still easy on the chef. No one wants to be flipping pancakes and frying eggs individually for guests, so this one pan meal leaves you mostly hands-free for the cooking process. I recommend serving with fresh orange juice and my delicious sourdough cinnamon rolls.
Ingredients for a High Protein Frittata
- Eggs: this recipe boasts a high ratio of eggs. I use 8 whole eggs which contains protein, vitamin D, choline and healthy fat that is a nourishing foundation for any meal.
- Cottage cheese: you would never know that cottage cheese plays a part in this recipe. It is baked into the frittata and completely melts away. It provides the creaminess that most recipes would provide through heavy cream, but is a low-fat, high-protein secret ingredient that increases the benefits of this flavorful dish.
- Bacon: A little bacon never hurt anyone, and the flavor from even a few slices of bacon just makes any brunch item better!
- Spinach: We all know spinach is a powerhouse food, and the freshness it provides to this dish balances out the savory flavors while providing micronutrients such as, Vitamin C, Iron and Vitamin B6.
- Mushrooms: While this ingredient is hit or miss for some people, I see mushrooms as another avenue to bring flavor for a dish. I brown the mushrooms in the remaining bacon grease to bring the savory flavors throughout the dish. Mushrooms don’t have much nutrition content but it’s any easy way to increase the complexity of flavors without adding unnecessary fats.
- Goat cheese: Chevre crumbles (which is the same a goat cheese if you have difficulty finding it) is the last ingredient that adds a little bit more protein while finishing off the flavor profile. I love the tang of goat cheese with the other savory flavors. Of course you could sub other cheeses if goat cheese isn’t your thing!
Last thing before we get cooking, I use a cast iron skillet from start to finish for this recipe. It boosts the iron content of food and is a great conductor of heat for even cooking. Check out this skillet to incorporate more iron into your food!
High Protein Frittata
Equipment
- 1 cast iron skillet or skillet that can be transferred from stove top to oven
Ingredients
- 8 eggs
- 5.3 oz cottage cheese
- 3 slices bacon
- 4 oz sliced white mushrooms
- 2 cups fresh baby spinach
- 4 oz goat cheese crumbles (chevre)
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp smoked paprika
Instructions
- Preheat the oven to 400F. Then place a greased cast iron skillet on medium heat on the stove.
- Add the 3 slices of bacon to the pan and cook, flipping once. Once fully cooked and crispy, remove from pan and set on a plate with paper towel to drain excess grease. Crumble the bacon when cool enough to handle.
- Don’t remove the bacon grease from the skillet. Add in the sliced mushrooms and allow to brown evenly on both sides.
- Once mushrooms are browed, add in the fresh spinach to the skillet and allow to wilt.
- While spinach wilts, add the eggs, cottage cheese, and seasonings to a blender. Blend on low until thoroughly combined.
- When spinach is wilted, add the crumbled bacon to the skillet. Stir the mushrooms, spinach and bacon until evenly distributed across the bottom of the skillet.
- Pour the egg mixture into the skillet. Do not stir but gently shake the skillet to evenly distribute the egg mixture. Leave on the stove until the edges are set.
- Once the edges are starting to set, sprinkle the goat cheese crumbles on top of the frittata and move the skillet to the oven.
- Allow to cook in the oven for 15-20 minutes or until the center is fully set and edges golden brown.
- Remove from the oven and allow to cool slightly before serving.
