Fresh Tzatziki Chicken Salad – for a High Protein Lunch

Tzatziki Chicken Salad

The flavor and base of this salad is the same as traditional tzatziki sauce. You’ll use plain greek yogurt, dill, mint, garlic, lemon and lime juice, red onion and cucumber to make this fresh, creamy sauce to coat your remaining ingredients in. Adding in chicken, feta cheese and some celery completes the dish that is so versatile and balanced for lunch or snacks. You’ll be able to whip this up in less than 20 minutes without any fancy culinary tools or talents needed! Consider topping with kalamata olives, cherry tomatoes and additional dill or mint when serving this dish.

Serve tzatziki chicken salad with pita, cherry tomatoes and fresh herbs.

If you work an 8-5 job like me, then you probably struggle with making lunch a nourishing meal of the day. Tzatziki Chicken Salad

Chicken Salad meets Tzatziki sauce – perfect for snacking or in a pita wrap for lunch!

Ingredients
  

  • ¼ cup finely diced red onion
  • juice of ½ a lemon
  • juice of ½ a lime
  • 1 clove of garlic, minced
  • 2 cups shredded chicken
  • ½ cup cucumber, chopped
  • ¼ cup celery, chopped
  • ½ cup plain greek yogurt
  • ½ cup feta cheese crumbles
  • 2 tbsp fresh dill, minced
  • 2 tbsp fresh mint, minced
  • salt & pepper to taste

Instructions
 

  • In a large mixing bowl combine red onion, lemon juice and lime juice and minced garlic and allow to sit for 15 minutes.
    Don't skip the soaking step, this helps neutralize the red onion and garlic fragrance a tad to prevent the dreaded onion breath – your coworkers will thank you!
  • Add in remaining the ingredients and stir to combine until well mixed.
  • Serve chilled in a pita wrap, on a bed of lettuce or with pita chips as a snack. Top with kalamata olives, cherry tomatoes, and/or additional fresh dill and mint.
